Went back to the old school way of tying roasts last week

I started out 15 years ago using nothing but butcher's twine and a simple knot. Then I got a job at a big shop where everyone used those elastic nets for everything. Thought it was faster until I had a customer complain the net left marks on her prime rib. Last week I pulled out the twine again for a 12 lb sirloin and honestly it felt better. Anyone else ditch the modern tools and go back to basics?

Honestly, isn't it wild how much better the control feels with just your hands and some twine?
