The real reason my briskets were drying out hit me last Sunday
I was trimming a 14 pound prime packer at 6am and realized the fat cap I was leaving was way too thin. 3 years ago a guy named Pete at a shop in Austin told me to leave a quarter inch minimum and I ignored him. After months of dry flats I finally measured my trim and I was taking it down to like an eighth of an inch. Anyone else learn a simple trick way later than they should have?

Trimming too thin is such a common mistake and it really does mess with the moisture every time.

Honestly been there way too many times. I took a pair of scissors to this one rosemary plant last spring and got way too aggressive with it just chopped everything back without thinking. Ended up with these sad little nubs that took forever to bounce back and the soil stayed soggy for weeks cause there weren't enough leaves to drink it up. Even the new growth that came in was all pale and weak for the first month. Now I just do tiny snips every few days instead of one big haircut.
