Struck gold at a random farmers market demo in Portland
Was killing time before a supply run and this old school butcher was breaking down a whole hog on a folding table. He used a curved boning knife to pop the hip joint in like 20 seconds, way cleaner than my usual method. Anyone else pick up tricks from just watching someone work in person?

That bit about popping the hip joint in 20 seconds really caught my eye. My old man used to break down deer this way, and he always said the trick was finding that sweet spot with the knife angle, but he never could explain it right. Was the butcher doing anything different with his wrist or the way he held the blade that made it look so smooth? Ive watched a few videos online but they never show the little details like that. Sometimes you really do need to stand there and see the hands move to get it.
