Rant: Took me 5 years to realize I was trimming brisket the wrong way

I was watching an old timer at the meat shop in Austin last month trim a packer and he pointed out I was cutting with the grain instead of against it for the fat cap, and now I'm mad about all those uneven slices I've served up.

Man I feel your pain. I spent a solid three years wondering why my brisket slices looked like they were cut by a blindfolded toddler before someone finally told me I was going the wrong way. Now every time I trim a packer I do this dramatic slow motion knife cut like I'm in a cooking show and my wife just rolls her eyes at me. At least we got there eventually, right? Better late than serving up more sad uneven brisket.

You ever notice how half of learning anything is just figuring out which direction to go? I swear, whether it's cutting brisket, assembling furniture, or even backing a trailer, everyone hits that moment where they've been doing it backwards for way too long. It's like some universal rule that you gotta fail the wrong way first before it clicks. My buddy spent two years struggling with a stuck shed door before realizing he was pushing instead of pulling. Now he opens it one-handed with an annoyed look on his face every time. We all have that one thing we gotta learn the hard way, I guess.
