My old boss in Cincinnati told me I was trimming too much off the tenderloin, and 20 years later I still hear him
Back when I was 19 and working at a shop on Vine Street, he watched me clean a whole tenderloin and said I was leaving money on the table, maybe 6 or 7 bucks worth on every one. I was so mad about it at the time, but he made me weigh the trim and keep a tally for a week and the numbers did not lie. Now I silver skin real careful and get almost no waste, and I teach the new guys the same weigh-it-out trick. What dumb little habit did someone have to beat out of you before it finally stuck?
