I heard a guy at the meat counter tell his friend that a sharp knife is more dangerous than a dull one, and I think he's got it backwards.

A dull blade forces you to use way more pressure, which leads to slips and less control, like when I was breaking down a 50lb pork shoulder last week and my old boning knife skipped off a joint.

Did your grandpa ever explain why he thought a dull knife felt safer right before it jumped?

Saw my buddy slice his thumb open forcing a dull paring knife through an apple peel.

My grandpa always said a dull knife is a liar, it feels safe until it jumps the bone. He lost part of a pinky to a butter knife trying to cut a bagel.
