Hit 10,000 pounds of sausage this week, expected more honestly
I tracked my output for a full year and just crossed 10,000 lbs of links at my shop in Omaha. I thought I was doing way less, so the number kind of annoyed me at first. Anyone else find that their actual count messes with their head more than the beef and pork lists do?

...so were you actually weighing every batch or estimating from casing counts? Because that's the part that always trips me up. I've gone back and forth with my own numbers and the difference between what I think I made and what the scale says is usually way off. Sometimes it's the water weight, sometimes it's shrinkage, but honestly I think people just get used to the grind and stop paying attention to the real totals. That 10k number sounds like a milestone but if you had a slower month hidden in there it changes the whole feel of it. Did you break it down by month or season? That's where I'd start looking if I were you.
