Had a close call with a dull boning knife last Tuesday
I was breaking down a side of beef at the shop in Springfield and my blade skipped off a hip bone. It nicked my glove and just missed my thumb. I had to stop, put on a new glove, and sharpen the knife right there. Has anyone else had a blade get dull that fast on a big job?

Man, that'll get your heart going. I keep a ceramic rod right on my table for that. When you're working through a big piece, the blade can go from sharp to dangerous in just a few minutes if it hits the wrong spot. I've had it happen on silverskin, that tough stuff can roll an edge over in one pass. Stop and touch it up right away, every time. It's faster than fighting a dull blade.

Ever have a blade just feel wrong in your hand before it even gets dull? I swear sometimes you can feel the edge going off just from the sound it makes on the board. Makes you stop and check it right away.
