Dropped $90 on a 'self-sharpening' knife block and ruined my good boning knife
I saw one of those ceramic rod slots built into a wooden block at a restaurant supply place in Tulsa and figured it would save me time on the line. Turns out the angle on those slots is way too steep for a curved boning knife, and after two weeks my Victorinox was grinding down to a needle point. I put a straight chef knife in there too and it took a chunk out of the heel, so the block now just holds my phone. Ninety bucks gone and a $40 knife with it. Has anyone found a pull through sharpener that won't wreck a curved blade, or am I just stuck with stones forever?
Ha, sounds like user error more than the block's fault, a boning knife has no business going in a pull through slot, that's on you. Just suck it up and learn your stones, a curved blade needs a steady hand and the right angle, no gadget is gonna fix lazy technique.
