Came across a whole pig that was butchered wrong at a shop in Detroit last week

The guy had cut all the shoulder meat into random chunks instead of following the muscle seams, and it was a mess to fix. Has anyone else had to rework someone else's bad cuts on a whole animal?

Sounds like somebody watched one YouTube tutorial and called themselves an expert on pork butchery. Guess they were going for a "surprise texture" challenge.

@seanlee maybe they were just trying to make it easier for braising or something, not everything needs to be instagram perfect.
