Had a customer call me out for over-torquing stems and it stuck with me

They told me I was using too much torque on their carbon steerer and pulled out a Park Tool torque wrench to check. I thought I was being careful but I was 3 Nm over spec. Now I always double check the manufacturer numbers before touching anything carbon.

Agree completely man, I did the same thing on a customer's fork once and felt like an idiot when they showed me the spec sheet. Now I torque everything carbon by the book and double check it.

Yeah the "I know what I'm doing" mindset bit me too. Lesson learned.
