Heads up on that new floral foam alternative from last year
I switched from the green foam to that 'Eco-Sorb' brand six months ago for a big wedding job. The stems just wouldn't stay put after a few hours, and I had to rebuild half the centerpieces. Has anyone found a reliable substitute that actually holds?

Oh man, "had to rebuild half the centerpieces" is a nightmare I know too well (my own kitchen looked like a floral crime scene). I gave up on that stuff after a similar disaster and just went back to the old foam for anything that needs to stay put. Sometimes the green brick is the devil you know, you know?

DerekMason is right about sticking with the green brick for the important stuff... it's just not worth the risk. I tried that same brand for a smaller event and had flowers leaning every which way by dessert. The problem seems to be that the eco stuff just doesn't lock the stems in the same way once it gets fully wet. For now, I'm only using the alternatives for loose, garden-style arrangements where things don't need to be perfect.
