Visited the new fermentation popup in Boulder and didn't get the hype
I checked out that trendy fermented foods place on Pearl Street last weekend. Everyone was raving about their kimchi, but it tasted like they forgot the salt and let it sit for maybe 2 days. Has anyone else had a disappointing batch from a place that's supposed to be an expert?

Right there with you. Bland kimchi is such a letdown.

Is it really that deep though, like are we losing sleep over under-fermented cabbage? @grayc27 I'd just hit up the farmers market next time and save yourself the disappointment.

I used to roll my eyes at people getting worked up over things like kimchi, but after buying some from a store that was basically just salty cabbage with no tang, I get it now. You don't realize how much that little kick matters until it's missing.
