Unpopular opinion: I saw a guy in Boise ferment peppers in a clay pot, not a glass jar.

Everyone swears by glass, but his hot sauce had a deeper flavor (maybe from the clay breathing a little). Has anyone else tried a non-glass vessel that actually worked?

Wait, in Boise? That's wild! I'm from there and I've never seen anyone do that. The farmers market crowd is pretty serious about their glass jars. A clay pot sounds like it would be a total mess to clean.
