So I compared a $20 airlock setup from the brew shop to just using a mason jar with the lid loose... the difference was huge.

Was it the amount of krausen that got messy? A loose lid lets in way more oxygen, which can really slow down fermentation. That airlock is totally worth the twenty bucks for a cleaner, faster brew.

What about the smell though? A loose lid means all those sulfur smells from fermentation just leak into your living space. I had a batch stink up my whole apartment for days because I tried to cheap out. An airlock keeps those smells in the fermenter where they belong. It's not just about speed, it's about not making your place smell like a brewery gone wrong.
