My first gallon of sauerkraut is finally ready after 4 weeks
I had to choose between using a regular mason jar with a weight or buying a proper fermentation crock. I went with the jar method because it was cheap and I already had the stuff. It turned out great, super tangy and crunchy, and now I have a huge jar of it in my fridge. Anyone have good ideas for what to do with a whole gallon of sauerkraut besides just eating it with sausages?

Saw a recipe once for sauerkraut pancakes, like a savory fritter. Could be a good way to use up a bunch of it fast. Might be worth a shot if you're getting tired of the usual.

Try adding it to grilled cheese or a tuna melt, it cuts through the grease really well. You can also just freeze some in smaller bags if you're getting sick of it.

Sauerkraut pancakes sound like a wild idea, but I can see it working. The tang would be great in a savory fritter. I might have to try that next time I have a jar to use up. It beats just eating it straight from the fridge.
