My first batch of kimchi hit the 30-day mark and it's still good
I was sure I'd messed it up when I forgot it in the back of the fridge for a month. Just tried it today and the flavor is actually really deep and tangy, not mushy at all. Has anyone else had a batch last way longer than they thought it would?

Oh man, my buddy found a forgotten jar from like six months ago and it was still totally fine, just super funky.

Was it sealed tight or just sitting with the lid on? I had a jar of pickles in the back of the fridge for almost a year once. The brine got cloudy and the garlic turned blue, but they were still crunchy and tasted fine, just really strong. I find that as long the seal is good and everything's under the liquid, it's usually safe even if it looks weird. The funk can be kind of good in a weird way.

Yeah the "super funky" part is so real lol. My friend's dad had a jar of pickled peppers in his garage fridge for who knows how long. We opened it on a dare and the smell was wild, like super sharp and vinegary. But we tried one and it was actually still good, just made your whole face pucker up. That kind of forgotten jar funk is its own whole flavor.
