My 5-gallon sauerkraut batch in the basement closet turned into a fizzy, pink mess last Tuesday.

Oh man, saw a thing that said pink usually means a yeast got in there. That batch is a goner for sure.

Read a whole article about this last year. Pink or orange surface growth is often a specific yeast that can make you sick. It's not just a weird phase, it's a sign the bad stuff has won. I wouldn't risk it with anything pink, smell test or not. Toss it and start over.

Is it really that bad though? I've had some weird looking ferments that turned out fine after scraping off the top layer. Pink doesn't always mean total failure, sometimes it's just a weird phase. I'd at least give it a smell test before dumping the whole thing.
