Finally got my first batch of sauerkraut to not turn to mush. Used to just cram it in a jar and hope for the best, but after reading about brine percentages last month, I weigh everything now.

I read this article last week about how most home bakers mess up their bread by not using a scale. It said measuring flour with cups can be off by like 20% because people pack it differently. I tried weighing my ingredients for banana bread, and it came out perfect every single time since. That one switch from volume to weight makes all the difference.

It's wild how many things in life are like that, you know? You just sort of wing it and get okay results, but then you learn one actual rule and everything clicks. I've been noticing it with my houseplants too, just watering when I felt like it versus actually checking the soil. That shift from guessing to knowing a small, solid fact changes the whole game.
