The pop-up taco stand near me has been open for 6 months now

I live in Austin and there's this taco stand that started as a weekend thing last year. It got crazy popular on TikTok with people posting their loaded quesadillas and birria ramen. I figured it would die out after a month like most food trends here but it's been 6 months and the line is still down the block. They even expanded to a second location last week. Is this just a really long fad or could pop-up food stands actually stick around for good? Has anyone else seen a trend like this survive way longer than expected?

The one on South Congress near my place started out as a pop-up and it's been over a year now. They still have a line wrapped around the building every weekend. I thought they'd fizzle out when people got tired of the birria hype but they just kept going. They added breakfast tacos last month and now I have to get there at 7am if I want any. I've seen three other pop-up stands in my neighborhood come and go but this one just keeps getting bigger.

Got up at 6am last Saturday just to get in line at that place by 7. My sister @alicecooper warned me it would be packed and she was right. Stood there for an hour but the brisket taco was worth every minute.
