PSA: That viral cloud bread recipe is a total disaster in humid weather

I tried making that cloud bread everyone raves about last Tuesday in Tampa where it's 90% humidity and the stuff deflated into a sad pancake within 5 minutes. My kitchen temp was 78 degrees and the egg whites just would not hold peaks no matter how long I whipped them. Has anyone else had this fail on them or is it just my bad luck with the moisture? There has to be a trick I'm missing.

Ugh the humidity is the absolute WORST for cloud bread I swear mine turned into a sad little frisbee last summer during a heatwave. My cat didn't even want to touch the mess and she eats literally anything off the floor. Maybe try whipping the egg whites with a tiny pinch of cream of tartar next time, it helped me get them to actually hold up for like a whole extra ten minutes. Or just accept the pancake life and call it a 'rustic cloud flatbread' like I did.
