I finally measured my kitchen countertops right after 4 tries
I used a fabric tape measure from my sewing kit instead of a metal one and the L-shape corner came out exactly right for once. Found out those metal tapes can give bad readings on long counter spans because they sag in the middle. Has anyone else switched tools and suddenly gotten better measurements?

...and here I thought my whole life was a lie with metal tapes and their stupid sagging ways. Fabric tape measures are great and all until you try to fold them back up and they turn into a tangled mess of spaghetti in your junk drawer. But hey, if it got you the right measurement on the fourth try, that's a win in my book. I just use a laser one now because I'm too clumsy to hold a tape straight for more than two seconds.

You ever tried marking the counter with painter's tape first to get the angle right before you even pull out the tape measure? I do that now after my third failed attempt on a tricky L-shape... it helps with the guesswork. @gavinlopez is right though, those fabric tapes turn into a mess real quick but they don't lie about the sag issue. The key is to hold the tape flat along the counter edge and use a pencil to mark where the corner hits. Laser ones work good too but I'm too cheap to buy one.

Oh man, it's funny how we all end up inventing our own weird little workarounds for things that should be simple. I mean, it's like everything in life has that one annoying step you gotta figure out yourself.
