Warning: my neighbor almost set his garage on fire with a wet turkey
He told me he didn't pat the turkey dry before dropping it in, and the oil exploded up so high it hit the ceiling fan and caught the cabinet above on fire - took him 2 hours to scrub the grease off everything. Has anyone else had a close call with water and hot oil like that?

Wait, people actually skip drying the turkey? I used to think it was just a myth until I saw the aftermath at a buddy's place last year. Definitely changed my game on that one.

Yeah, that part about "actually skip drying the turkey" got me. It's not just about patting the bird dry with paper towels either. You gotta make sure the inside cavity is dry too because water can pool in there and then spill out when you lower it in. My brother did this last Thanksgiving, he thought just drying the outside was enough, and the oil popped like crazy. Took him a whole hour just to get the grease off his stove top. So yeah, it's a real thing, not a myth at all.
