Peanut oil smokes around 450 degrees, canola taps out closer to 400, so yeah, that jump makes a difference when you've got a 12 pound bird hitting hot oil. In a Brooklyn apartment you're basically frying inside a shoebox, so even a few degrees of extra smoke sets off every alarm on the floor. Next time crack a window, aim a box fan out, and pull the battery on the alarm before the oil even heats up. Or just do it on the roof like half the neighborhood already does.
