Paper towel trick saved my oil after a 3am fish fry disaster
Last Saturday I dropped a whole batch of batter-coated cod and the oil turned to sludge in seconds. Instead of dumping $12 of canola, I ran it through a fine mesh strainer lined with two layers of paper towel twice. Has anyone else salvaged burnt oil this way, or do you just pitch it every time?

Toss it every time, seriously. Paper towels dont catch the tiny burnt bits that sink to the bottom and keep burning, so your next batch will taste like ash no matter how many times you strain it. Plus oil that hit 400 degrees with batter crust in it has already broken down chemically, that stuff is rancid and full of free radicals you dont want in your body. Save your stomach and just buy fresh oil, $12 is cheap compared to a ruined meal or a grease fire later.
