I used to dump frozen fries straight into cold oil until my uncle yelled at me at a backyard BBQ in Tampa
For years I thought dropping frozen food into room temp oil and letting it heat up together was fine, because that is how I saw my roommate do it in college and nothing caught fire. Then two summers ago I was at my uncle's place in Tampa for a July 4th cookout and he watched me fill his fryer with cold peanut oil, toss in a whole bag of frozen wings, and walk away. He came back about 90 seconds later, grabbed my arm, and said "you are making grease soup, not fried chicken." He showed me his thermometer, waited until the oil hit 350, and dropped a single wing in to test it. The difference was night and day, crispy skin in 8 minutes instead of soggy pale chunks that took 20 and still felt raw. I had been serving people sad, oily wings for years and honestly nobody told me. Now I keep a $12 clip on thermometer in the drawer and I will not start frying until it reads right. Has anyone else had a family member quietly fix a cooking habit you did not even know was broken?
