Actually changed my mind about wet batter after a talk at the county fair
Was at the Franklin County Fair last August and watched this older guy drop a basket of wet-battered onion rings. Oil splattered everywhere and the rings came out like rubbery blobs. He just looked at me and said 'dry dredge never lies to you, son.' That one sentence made me switch and I haven't had a greasy mess since. Anyone else have a random stranger change your fry game?

Ha my buddy Dave swore by wet batter until he tried to dry dredge fish tacos at a tailgate and never looked back. He said the crunch was night and day and his kitchen stopped looking like a war zone.

Ha, no joke! I tried dry dredge for chicken wings once and it was a total game changer. @fiona_young your buddy Dave is onto something, wet batter always ends up looking like a crime scene in my sink. Dry dredge just gives you that perfect sandy crunch without the whole splash zone situation. I still use wet batter for onion rings though, some things just need that goo.
