Accidental onion ring victory after my oil hit 400F by mistake
I was trying to fry fish for the first time in my little 3-quart Proctor model and the dial stuck. Oil hit 400F before I noticed. Threw in some battered onion rings on a whim and they came out GOLDEN in like 90 seconds, zero sogginess. I tried the fish after and it was rubbery, but those rings were the best I've ever made. Anyone else accidentally discover a perfect temp for one food while ruining another?

That rubbery fish is the price we pay for learning that perfection usually sits right next to disaster.
