A 5-minute recipe reply turned into a 3-hour rabbit hole
I was scrolling a food page and saw a comment asking if you could swap heavy cream for coconut milk in a pasta sauce. Someone replied "sure, but it changes the flavor" and that was it, I went down a full investigation of 14 different threads on dairy swaps. Took me 3 hours on a Tuesday night to conclude that yes, it works but you'll taste the coconut. Has anyone else ever gotten stuck on a dumb comment chain that just ate your whole evening?

Coconut milk in pasta sauce is a classic trap, I've been down that exact hole. The real move is to use the canned stuff, not the carton, because the carton is way too thin and watery. Also, you gotta balance the sweetness with something acidic, like a splash of lemon juice or extra tomatoes, otherwise it tastes like a dessert sauce. I've ruined a whole batch of vodka sauce that way, and my wife still brings it up. Next time just search "dairy free alfredo" and pick one from a site that looks like it was made in 2012, those are always the most tested.
