Shop talk from a barista flipped my home brew routine

Last Saturday I was grabbing beans at a local spot in Austin and the barista said my 15 gram dose was probably choking my V60. He showed me his scale reading 12.5 grams and my next cup came out way smoother, no bitter bite. Anyone else found that cutting their usual dose fixed a stubborn brew?

Damn, that actually makes sense. I watched a video last week where this roaster guy talked about how most people overdo their dose on pour overs because the bag says one thing but the actual bean density changes everything. Light roasts are denser than dark ones, so 15 grams of one bean can be way more volume than 12 grams of another. I tried dropping my usual amount after hearing that and yeah, it fixed the bitter taste I'd been fighting for weeks. The water flows slower when there's too much coffee, so it over extracts and turns harsh. Your barista knew what he was talking about for sure. I just wish someone told me this years ago.
