My brother told me to stop using tap water for my pour over

Honestly, I thought he was just being picky. He said our city water in Phoenix is too hard and makes coffee taste flat. I tried it with a gallon of filtered water from the store last week. Tbh, the difference was crazy, like the fruit notes in my Ethiopian beans actually came through. Has anyone else had a simple change make that big of a difference?

My old roommate in Tempe had the same hard water issue. I started using a basic Brita pitcher for my coffee water and it was a total game changer. The minerals in tap water just coat your tongue and block all those good flavors. Now I keep a dedicated gallon jug in the fridge that I refill with a zero water filter. It sounds like a small thing, but it makes more difference than buying more expensive beans sometimes.

Yeah, my old kettle had so much scale buildup it looked like a science project. I switched to bottled water just for brewing and it was like a whole new drink.
