Why does nobody talk about the language barrier issues in rural Japanese kitchens? As a visiting chef, I struggled big time.

In Shikoku's farm kitchens, I found hands-on learning beats language every time. Young cooks there use clear demos and point to ingredients. You pick up the needed words through doing, not talking.

Sounds like someone expected a cooking class instead of a real kitchen. Elizabethh63 is right about just watching and pointing, because half the time they're just telling you to move your elbow anyway. You figure it out when they start waving a knife around.
