Watched a line cook at 2 AM fix a broken hollandaise with ice cubes and it blew my mind

I was closing up at this spot in Portland last weekend and saw a guy drop a few ice cubes straight into his broken sauce, whisked it back together in like 30 seconds. I always thought you had to start over from scratch or use a double boiler trick. Has anyone else tried this method for saving an emulsion?

Yeah @owens.cameron I get the worry about watering it down, but in my experience a couple ice cubes won't kill it. It's actually kind of a broader life thing where people think the fix has to be complicated when sometimes the simplest hack works better than you'd expect.

Idk, I mean ice cubes just seem like they'd water down the sauce more than anything. I've always had better luck just whisking in a splash of cold water slowly.
