Walked into a diner in Philly last week and the chef was using a blowtorch on eggs

I was grabbing breakfast at this hole-in-the-wall spot in South Philly, and the guy behind the line hits some scrambled eggs with a torch right before plating. He said it adds a smoky crust without overcooking the middle. Has anyone else seen this trick or tried it at home?

Honestly @riley_schmidt you probably just made it more exciting for the neighbors though haha. That torch trick sounds wild to me, like the egg is about to fight back or something. I bet if you try it at home you end up with a fire extinguisher in one hand and a burnt spatula in the other. The crispy part must be tiny and the rest just raw. That chef must have steady hands or a death wish.

Tried torching my eggs once and nearly set off the smoke alarm, just my luck.

Wait, so this guy is out here torching scrambled eggs and not even setting off the smoke detector? Ngl, that sounds like pure chaos to me. I've seen people use a brulee torch on a steak crust but on eggs seems like a one way ticket to a fire department visit. The fact that he claims it adds a smoky crust without ruining the inside is wild and I can't tell if he's a genius or just messing with people. Tbh you must have some serious nerve to trust a random chef with a blowtorch near your breakfast.
