TIL most kitchen fires start from dirty hood filters, not open flames

Read a report from the Portland fire marshal's office last month that said 4 out of 5 restaurant fires trace back to grease buildup in the hood system. I always figured it was flare-ups from the stove or someone leaving a towel too close. Turns out it's just us not scrubbing the baffle filters enough, especially on late night closes. We did a deep clean on our 12 year old hood last week and the grease that came off was honestly embarrassing. Anyone else been surprised by something basic like this that you just never thought to check?
