Testing my mise en place against a buddy who preps as he goes during a busy Saturday dinner rush in Austin

He was faster at first but by 7pm I was still calm and he was scrambling for ingredients, has anyone else found a big difference in how the two styles hold up under pressure?

Worked a few big Friday nights at a place on South Lamar and I always went with full prep. Got there at 10am to dice all my onions, celery, bell peppers for the next three hours. By the time we hit the rush around 7 I just had to grab and go while the line cook next to me was still chopping garlic every time an order came in. It made a huge difference for my stress levels, especially when we got hit with a 20 top right at the peak.

Did you ever catch that guy who couldn't keep up just staring at his station when the rush hit, or was he at least smart enough to ask for help before it got ugly?
