PSA: A line cook at a diner in Tulsa told me to salt my pasta water 'like the sea' and now I'm torn
I was at a little 24 hour diner off Route 66 in Tulsa about 3 months ago and the line cook there, older guy, told me he salts his pasta water until it tastes like the ocean and never measures. I always did the whole 'handful of salt' thing my old chef taught me, so now I'm split. One side of me says his way gives you better seasoned noodles every single time, the other side says you waste salt and it doesn't matter once sauce hits it. What do you all do, taste the water or just dump and pray?
