Paid $150 for a sous vide circulator I used exactly twice

Bought a Joule last spring thinking I'd meal prep like crazy but the constant bag sealing and water bath setup made it more hassle than it was worth, did anyone else find sous vide too fiddly for weeknight cooking?

Bet you didn't give it a fair shot. I use my Anova at least three times a week and it's way less work than standing over a stove. Drop a steak in a bag with some salt and pepper, toss it in the water, and walk away for an hour. No flipping, no temp checking, no worrying about overcooking. Set it up Sunday night with chicken thighs for the week and you've got perfectly cooked meat every time. The key is to prep a bunch of bags on the weekend so during the week you just clip them in and forget it.

Wait, prepping bags on Sunday is supposed to be... fun? I already spend enough time on Sunday dreading Monday, not sealing chicken thighs in plastic. It felt less like cooking and more like a science experiment I didn't sign up for.
