My old head chef in Chicago swore by adding a pinch of sugar to any tomato sauce. I thought it was a crutch for bad tomatoes, but I tried it with some local heirlooms last week and damn, he was right.

That "crutch for bad tomatoes" line is exactly what my dad used to say. He'd get so mad seeing sugar on the table near the sauce.

My grandma's secret was a pinch of sugar and a grated carrot. It cuts the acid without being sweet. Honestly, a lot of those old rules came from trying to make bad ingredients taste good. Now I get good canned tomatoes and don't need either trick. The goal is a balanced sauce, not following a checklist.
