My old head chef in Chicago swore by adding a pinch of sugar to any tomato sauce. I thought it was a crutch for bad tomatoes, but I tried it with some local heirlooms last week and damn, he was right.

That "crutch for bad tomatoes" line is exactly what my dad used to say. He'd get so mad seeing sugar on the table near the sauce.

Man, that's it exactly. It's never just about the sugar in the sauce. It's about a whole way of doing things, you know? People get these rules in their head about the "right" way to make something, and anything else feels like cheating. I see it with everything, not just food. It's like we need to believe there's one perfect method, and shortcuts are a personal insult.

My grandma's secret was a pinch of sugar and a grated carrot. It cuts the acid without being sweet. Honestly, a lot of those old rules came from trying to make bad ingredients taste good. Now I get good canned tomatoes and don't need either trick. The goal is a balanced sauce, not following a checklist.
