Line cook at my new spot said he never tastes his seasoning twice, and his reasoning stuck with me
I was working the saute station at a spot in Portland last month and the guy next to me, 12 years on the line, told me he only tastes a dish once before it goes out. I asked why and he said tasting again just makes you second guess what you already knew was good. I tried it that Friday during a 180 cover night and honestly my plates came out more consistent because I wasn't fiddling. Now I'm wondering if his rule works for everybody or if it's just a confidence thing that comes with time. Any of you have a rule like that you picked up from someone on the line?
Wait, 12 years on the line and he only tastes once? That seems wild to me because I always thought you had to check again after adding anything. The second guess thing makes sense though, since messing with a dish you already nailed is how you mess it up. Maybe the real trick is just trusting your gut after enough reps.
