I was searing scallops wrong for years until a cook in Portland showed me the trick

I always crowded the pan trying to cook a dozen at once for a rush, and they'd steam instead of getting that perfect crust. He pointed at my pan and said, 'You need space, they're not friends,' and now I only do four at a time max. Do you guys have a different rule for how many you can sear at once in a standard 12-inch pan?

Took me years to figure that out. My kitchen used to be a total war zone. Now my garlic and onions go in at completely different times. Game changer.

My old Italian neighbor swore by adding them together, but separating them really does make everything taste better.
