I was overworking my dough for a decade
Had a new guy on my crew, his wife runs a bakery. He saw me kneading pizza dough for like 15 minutes straight. Said 'My wife says you can feel it relax when it's ready, maybe 5 minutes in.' Tried it. The crust was way better, lighter. How did I miss that for so long? Anyone else have a basic skill they were doing wrong for ages?

Oh man, I feel this. I used to stir pancake batter until it was completely smooth, like I was mixing concrete. For years I wondered why my pancakes were so tough and flat. Turns out you're supposed to leave it lumpy! I guess some of us just have a hard time unlearning our own heavy-handed ways.
