I finally switched from a whisk to a blender for my hollandaise

For a long time, I made hollandaise by hand with a whisk over a double boiler, like I was taught in school. It took about 15 minutes and my arm would be sore. Last month, a cook from a hotel in Chicago showed me how he uses a regular blender with hot butter. I tried it, and now I can make a perfect batch in under 3 minutes with no risk of breaking. The texture is just as smooth. Has anyone else made a switch like this with a classic sauce?

That hotel cook trick is a game changer. I see this everywhere now, people finding simpler ways to do old tasks. Like using a potato masher for guacamole instead of a fork, or a jar to shake salad dressing instead of whisking it in a bowl. We hold onto the "right" way we learned, even when it's harder. What's one old method you're still hanging onto?

Remember when we all used to hand-write checks? My buddy still does that for his rent, @the_eric. I watched him fill one out last month, licking the envelope and everything. I told him about online transfers, but he says the ritual makes him feel like a real adult. It takes him ten minutes and a stamp, but he won't change. What's the point of clinging to something that just eats up time?

Switched to a food processor for pie dough years ago and never looked back. It's faster and my crusts are way more consistent now.
