Hot take: my walk in cooler died at 2am during a 400 cover dinner service
The compressor on our 12 year old True cooler finally gave out on Saturday night and I had $3k worth of product sitting in there getting warm. I threw everything into the freezer and grabbed bags of ice from the gas station down the street at 2:30am to pack the dairy and proteins. Ended up losing maybe $400 in produce but saved the rest. Does anyone here keep a backup plan written down for cooler failures or do you just wing it like I did?
