Heard a line cook say mise en place is a personality, not a system
Last Thursday I heard this guy in my kitchen, Rashid, say that during a rush and honestly it stuck with me. He meant people either prep with calm or they prep with chaos, and the station setup shows which one you are. Is that a fair way to look at it, or am I overthinking a throwaway joke?
