Found out a standard dinner plate is only 9 inches, and that explains so much about my plating
I was reading a menu design book by a chef named Aaron Allen last week and he said most home plates are 10 to 11 inches while restaurants plate on 9 inch rounds, which is why my food at home always looked lost out there. Switched to 9 inch plates at my spot in Boise three weeks ago and the same portion of short rib now fills the whole thing. Took some getting used to, but tickets stopped coming back with half eaten sides. Any of you downsize plates and have the portions look bigger without actually adding food?
Did the 9 inch switch change how much you actually put on the plate, or just how it looks? Curious if you're still scooping the same amount of mash and veg or if your cooks started trimming without being told. The half eaten sides thing is what gets me, sounds like folks were full before they finished.
