Bought a $400 immersion circulator for a pop-up that never happened
I was sure our new 'elevated street food' idea would take off, so I invested in a top-end sous vide rig for perfect proteins. The pop-up fell through after two weeks of planning (the city permit process was a nightmare, honestly). Now this fancy machine is just taking up space in my tiny kitchen at home. I've used it maybe three times to make eggs, which feels silly. Anyone have ideas for a small kitchen tool that actually earns its keep?

Yeah but a cast iron skillet won't hold a steady 135 degrees for two hours while you're doing something else. The circulator isn't useless, you just gotta commit to using it for meal prep one day a week.

Ever think you need the best gear to make great food? I used to chase fancy tools too, but honestly, my most used thing is just a good cast iron skillet. It does everything from searing to baking, and it lives on my stove because I use it almost every day. That kind of simple tool always earns its spot. Maybe the real trick is finding the one thing that works hard for you, not the thing that just looks impressive.

What kind of food were you planning for the pop-up? I'm wondering if you could use the circulator to batch-cook and freeze some of those proteins for easy meals at home, like the pulled pork or chicken you might have served.
