Took me 5 years to realize I was storing my flour wrong in the pantry and making my bread turn gummy

A bag of my cheap all-purpose got mealy bugs last month and that's when a baker buddy told me airtight containers matter way more than the brand, so has anyone else had a kitchen habit that secretly ruined your results for ages?

Isn't flour just flour no matter how you store it though?

Ray, I used to think the same thing until I left a bag of flour in a damp cabinet for a few weeks. Tried to use it and it smelled like old cardboard and had little clumps in it. Now I keep my flour in a sealed plastic container in a cool spot by the pantry, and it stays fresh way longer. Your mileage may vary but I learned that one the hard way.
