She didn't even say anything, just left her phone on the counter showing my own Instagram post with the date circled, and that silent stare made me rethink every white lie I've told this year, has anyone else been caught by the simplest detail?

That silent stare" is doing a lot of heavy lifting in your story. Most roommates don't have the patience to build a case file, they just bring it up when you're both getting coffee. You might be overthinking it, but honestly the timestamp thing is pretty funny and I doubt she's keeping score. Just own it next time and say you needed a mental health day, people respect that more than a convoluted story.
