Had a lightbulb moment comparing 'ghost kitchen' and actual restaurant food last week

I ordered from a spot on DoorDash that had like 4 different virtual brands all from the same address. Got a burger and some tacos. Both were decent but felt like they were made in a microwave. Then I walked to a local diner 3 blocks away and spent the same $14 on a patty melt that was actually grilled to order. The difference was night and day. The ghost kitchen rushed everything with frozen stuff, but the diner took 12 minutes and used fresh ingredients. Has anyone else noticed this gap between the convenience brands and real kitchens?

Oh man, you hit it right on the head. I tried a virtual brand "Italian place" last month and got a sad, rubbery meatball sub that felt like it was sitting under a heat lamp for an hour. Real restaurants just care more about the final product, no question.

Yeah my buddy ordered from a ghost kitchen BBQ place and got ribs that tasted like they were boiled.
